Rosemeyer BBQ Spring: The Pork Ribs That Changed My Mind
I arrived at Rosemeyer about half an hour after opening and found a line already waiting. It was so hot outside that I took my food back to the car. One bite of the pork rib later, I understood why people were willing to wait.
What I ordered
The rib box
I ordered the box combo with pork ribs, jalapeño-cheese sausage, green beans and two slices of bread. The rib looked juicy before I even took a bite, and it tasted even better than it looked.
The meat was moist with just the right amount of fat. It had smoke, char and a little sweetness—the kind of flavor I love. I tried the barbecue sauce, which was tangy and sweet, but the rib didn’t need it.
I haven’t always been a pork-rib person because I’ve had so many tough ones. This was different. Every bite tasted as good as the first. At that point, it was the best barbecue rib I’d ever had, and I wanted to save some for Thomas so he could try it, too.
Jalapeño-cheese sausage
The sausage was really good. I liked the cheese, the jalapeño spice and the hint of sweetness with the grilled flavor. It fit right in with the ribs.
Green beans
The green beans were okay. They were a side to the main event for me—the ribs were clearly the star of this box.
How much was it?
- My box combo: $20 in the July 2024 video
- Included: Ribs, sausage, one side and two slices of bread

What would I order again?
The ribs, without question, and I’d be happy to have the jalapeño-cheese sausage alongside them. This meal changed how I thought about pork ribs. I left saying I’d be willing to wait for this barbecue again.
