Bloofin in Spring: The Sushi That Reminded Me of Japan

By · My firsthand restaurant visit

I love sushi, and I’m a tough critic when it comes to it. Bloofin was my favorite sushi restaurant going into this visit, and this meal reminded me why. The buttery fish, the delicate textures and the balance of fish to rice made me think of the sushi I ate in Japan.

There were bites that left me with no words. That scallop with foie gras? I felt like I had just eaten a cloud.

From my video published November 12, 2023.

What I ordered

Fried calamari

The squid was tender instead of chewy, with a light, fluffy coating. It was one of those snacks that makes you keep reaching for more. My tip: ask for the sauce on the side so the coating stays crisp.

A citrusy fish appetizer

I liked the citrusy sauce with the fish, but I didn’t need all the extras. The fish tasted so good on its own that the apple and orange felt unnecessary to me. Sometimes simple really is better.

Salmon and salmon belly

The salmon was amazing, and I loved the fish-to-rice ratio. There wasn’t a big mound of rice overwhelming the fish. One piece had a little strawberry garnish, but I would have been perfectly happy with just the fish and rice.

The salmon belly was another bite that nearly made me emotional. It was that good!

Scallops

The scallop with foie gras was sweet, savory, buttery and unbelievably soft. It melted in my mouth like a little cloud. I wanted that experience again immediately.

I also tried spicy chopped scallop and whole scallop. The spicy chopped version had enough mayonnaise to complement it without overwhelming it, and the whole scallop had that beautiful balance with the rice.

Yellowtail and yellowtail belly

The yellowtail was smooth, creamy and buttery. The belly left me struggling to explain how good it was. These were the kind of bites that made me feel like the chefs were doing something magical back there.

Medium fatty tuna, otoro and sweet shrimp

The medium fatty tuna reminded me of discovering how good sushi could be on my Japan trip. The otoro practically disappeared in my mouth—it was so soft.

The sweet shrimp lived up to its name, and I enjoyed the lightly battered fried head too. I also tried aji, or Japanese horse mackerel, which I encouraged people to try here.

How much was it?

What would I get again?

The scallop with foie gras would be high on my list, along with yellowtail belly, salmon belly and otoro. I loved the fish throughout this meal. Bloofin was the restaurant in Texas that most reminded me of the sushi I’d had in Japan.
