The Gypsy Poet Houston: Big Hat, Margherita & My First Hot-Honey Pizza

By · My firsthand restaurant visit

I’m not usually the person craving pizza, but I wanted to see why so many people talked about The Gypsy Poet. Thomas loves pizza, so we visited the Studewood location together. I ended up eating four slices.

From my video published July 6, 2025.

What we ordered

Big Hat, secret-menu version

I planned to keep it simple with pepperoni, then changed my mind at the counter. The Big Hat’s mushrooms, shallots, mozzarella and Italian sausage sounded too good to pass up, and I ordered the secret-menu version.

I liked the flavor, especially the mushrooms and shallots, but hadn’t realized this version came with arugula and goat cheese. Those aren’t my favorite toppings, so that was a mistake in my own ordering. Removing what I didn’t like made the next slice much better for me.

Margherita pizza

Thomas ordered the Margherita, and I tried it too. I loved the basil and enjoyed the cheese. The crust had a light, fluffy texture with some crunch, rather than feeling heavy. This was pizza crust I actually wanted to eat.

Truffle oil and hot honey

The truffle oil was such a good addition. It tasted garlicky to me, and I kept spraying more onto my slices. I also tried hot honey on the crust for the first time. It made the crust almost like dessert—a combination I hadn’t thought to try before.

How much was it?

  • Margherita “The Queen”: $15.99
  • Cappellone “Big Hat,” standard version: $17.99

I ordered the secret-menu version of Big Hat. The price above is for the standard pizza; I couldn’t verify the extra charge for my version.

What would I order again?

I’d return for the light crust and use that truffle oil again. Next time I’d choose toppings more carefully, knowing arugula and goat cheese aren’t for me. At the time of this visit, I called it the best pizza I’d tried in Houston so far.
