Bún Bò Huế Cố Đô 2 Houston: A Spicy Noodle Soup I Keep Coming Back To
Bún bò Huế is my favorite noodle soup out of the ones I’ve tried, and Cố Đô 2 is one of my favorite places for a solid bowl. I went for a late breakfast and ordered a medium. The food came out quickly, and the broth was hot before I even added anything.
What I ordered
Medium bún bò Huế
I tasted the broth first. It was aromatic, hearty and full of flavor, with a good balance of spice, herbs and saltiness. I still wanted more heat, so I added two spoonfuls of chili, the vegetables and a little lime.
The round noodles were thicker than pho noodles, but they had a smooth bite rather than feeling heavy or dense. I liked getting noodles and crunchy vegetables together in each mouthful.
The meat and toppings
The thinly sliced meat was so easy to chew, with little bits of fat between the slices. I also loved the pork sausage: its spongy texture soaked up the broth.
My bowl included pork blood and a pig’s foot as well. The blood had a mild taste to me with a slight iron-like finish. I enjoyed the tendon and gelatinous texture around the pig’s foot.
How much was it?
The menu had small, medium and large sizes, and the portions were generous. Check the current menu for pricing.
What would I order again?
The bún bò Huế, of course. The flavorful broth, tender meat and pork sausage are the combination I come here for. I like to taste the broth before adding chili so I can appreciate it first and then adjust the heat.
