Vua Bun Bo Houston: Tender Meat, Bouncy Noodles & a Lighter Broth

By · My firsthand restaurant visit

My nephew recommended Vua Bun Bo, and it took me about a year to finally try it. I love bún bò Huế, so I was excited to sit down with my family and see why my nephews kept talking about this place.

From my video published December 3, 2025.

What I ordered

A small bowl of bún bò

We ordered five small bowls for our group. A small turned out to be plenty for me, with noodles, several kinds of meat and a side of vegetables.

I tasted the broth before adding anything. It was lighter and less intense than the bún bò Huế I usually eat, but still savory and aromatic. It wasn’t my favorite broth style, though I thought they did this lighter version well.

The meat and noodles

The thinly sliced meat was so soft. It was the best I’d had anywhere for this dish. The noodles were bouncy instead of overcooked, and I loved the gelatinous texture of the pork foot. I also enjoyed the pork blood and the slightly sweet pork ham.

Vegetables and chili

I almost forgot the vegetables! Once I added them, the bowl felt complete. I put in nearly the whole plate because I love that contrast with the soup.

My mistake was adding too much chili oil. Start with a little, taste, and add more if you want it. I made mine so spicy that I couldn’t finish the broth.

How much was it?

Small bowl: $13.50 per bowl.

Prices may change, so check the current menu before ordering.

What would I order again?

I’d return for the small bún bò, especially for that tender meat and the variety of textures. My rating in the video was 8/10. Next time I’d be more careful with the chili oil.

One more stop: Mía & More

Afterward, we stopped in the same plaza for sugarcane drinks at Mía & More. I tried passion fruit sugarcane, which my nephews recommended. It was sweet like candy with a little sourness from the passion fruit—a combination I really liked.
